Ingredients:

Frozen spinach and broccoli (or any green vegetable like peas, asparagus, etc.)

Butter (a few tabs)

Seasonings of your choice (salt, pepper, garlic powder, etc.)

Instructions:

1. Boil the Pasta:

  – Bring a pot of salted water to a boil.

   – Add your pasta and cook according to the package instructions until al dente.

   – Reserve a cup of pasta water before draining.

2. Cook the Vegetables:

 – While the pasta is boiling, place your frozen spinach and broccoli in a microwave-safe bowl.

  – Microwave until cooked through. You can also use other green vegetables such as green peas or asparagus.

  – Let the vegetables cool slightly.

3. Prepare the Green Sauce:

  – In a blender, combine the cooked vegetables with cottage cheese.

   – Add a bit of the reserved pasta water to help blend the mixture smoothly.

   – Season with salt, pepper, and any other seasonings your family enjoys (garlic powder, onion powder, a pinch of nutmeg, etc.).

   – Blend until the mixture is smooth and creamy.

4. Combine and Serve:

 – In the pot used to boil the pasta, return the drained pasta and add a few tabs of butter.

 – Pour the green vegetable and cottage cheese sauce over the pasta.

 – Stir until everything is well combined and the pasta is evenly coated with the green sauce.

5. Serve and Enjoy:

 – Serve the green pasta warm. It’s perfect for toddlers and tired moms alike!
